This is my Anything Goes Rocky Road Recipe or as my 3 year old daughter Coco-Ivy calls it Crossy Road!
It is a perfect no bake sweet treat activity the kids will enjoy making and of course enjoy eating.
The five main ingredients are dark and milk chocolate, marshmallows, butter and syrup then anything you can find in your cupboard will do. A great recipe especially during our new normal and unpredictable grocery shopping dilemmas during lockdown.
Ingredients
125g Butter
150g Any Dark Chocolate [Broken into pieces]
150g Any Milk Chocolate [Broken into pieces] I used smarties milk chocolate bar
100g Mini Marshmallows [Large mallows should be cut into smaller pieces]
3 tbsp Golden Syrup
Here are the anything goes ingredients, just ensure they weigh 200g combined
100g Chocolate Digestives [Roughly Broken]
100g Wholegrain Cherios Cereal
Other alternative suggestions
Rich tea biscuits or any of your favourite left over biscuits [Roughly Broken]
Any Nuts roughly chopped
Raisins
Glace Cherries
M&M’s
Coconut Shavings
Rice Cripies
Method
Line a 24 cm | 9″ square baking tray with non stick baking paper.
Heat the butter, chocolate and golden syrup in a pan over a low heat.
Stir in the marshmallows and your anything goes ingredients I used crushed chocolate digestive biscuit pieces and wholegrain cherios cereal.
Tip the mixture into the tin and roughly smooth the top with a spreading knife.
Chill for about 2 hours ensuring its firm enough to slice.
Top Tips!
If you prefer the marshmallow to keep it’s shape then wait a few minutes until the mixture has cooled before adding to avoid them melting.
These Rocky Road squares are intensely rich so I do sometimes slice them into bitesize pieces.
